The kids are outta school so you’re going camping! Growing up we went camping every Spring Break and every Summer. We ate so well while camping and ended each day with dessert. Here are some fail-proof, no fuss, easy and delicious desserts you can make after camping. AND you an prep these ahead of time, before going camping and store them in large ziploc bags.
No Fuss Apple & Berry Crisp
Serves 2-4 | 20 mins to make Ingredients: Fruit “filling”: 3 Apples chopped Berries (Blueberries or blackberries) 1 teaspoon of cinnamon (optional) Pinch of salt Juice from 1 lemon wedge Crisp topping: 1/3 cup of soften butter 2-3 tablespoons of brown sugar 1/2 cup of quick oats 1/2 cup of all purpose flour Cooking spray (optional) Steps: Tear off a foot of foil to make a packet. Spray 1 side of the foil with cooking spray or rub with some butter. To make Crisp: in a small bowl, loosely stir together the tablespoon of soft butter, sugar, cinnamon, salt and oats. To make fruit filling: in another small bowl, toss berries and cut up apples with lemon juice, a sprinkle of sugar and cinnamon Split the fruit mixture between 2-4 pieces of foil (per person). Do the same with the crisp mixture. Fold the foil up to make a single packet. Tear off another piece of foil and fold it up over the packet (so each packet has 2 layers of foil). Put on the grill over the campfire or on a bbq and grill for 15 mins.
Easy Campfire Cones
Serves 1 | 10 mins to make
Ingredients:
1 waffle ice cream cone
1/4 cup of semi-sweet dark chocolate chips
1/4 cup of mini marshmallows
1/4 cup of diced fruit (strawberries and or bananas)
For extra yumminess add some toffee chips, almonds, and dried coconut.
Steps:
Mix chocolate chips, marshmallows, fruit together in a bowl. Scoop the mixture into your waffle cone and wrap it up tightly in foil.
Heat up the cone over a campfire on the grill or on a bbq.
It should be ready to each in 5-7 minutes!
Gooey Banana Boats
Serves 1 | 5 minutes to make
Ingredients:
1 Banana (I like to peel it)
1 tablespoon of chocolate chips
1 tablespoon of mini marshmallows
Tear off a foot of foil to make a packet. Peel then slice a banana, halfway, not all the way through, the long way, from top to bottom).
Stuff the inside of the banana with chocolate chips and marshmallows.
Wrap in foil and place on the grill of a campfire or a BBQ for 5 minutes.
